Our second Private Reserve coffee, a delightfully complex Honduras Californeo. From the esteemed Californeo micro-lots of Marcala, Honduras, this coffee has been beautifully roasted to accentuate the bright citrus and deep chocolate undertones.
This is the first coffee we have carried that is processed using the “honey” method. When the coffee cherries are picked from the tree, they must be dried before they can be roasted. Typically these cherries are left to dry with either all of the “fruit” still surrounding the bean, which is called “natural process”, or they are washed with water to remove all of the excess fruit so they can dry uninhibited. Honey processing involves removing the outer layer of skin and pulp of the cherry but keeping the sticky sweet and honey-like mucilage on the beans while they dry. The honey process uses significantly less water than washing the beans, and dries quicker than natural processed beans. There is also slight fermentation that happens during the honey-process, which adds additional fruity flavor and complexity to the beans.
